Pork roll with miso glaze

1. Prepare the filling: grate the carrots on a coarse grater, cut the onion into strips, and slice the mushrooms. Fry the vegetables in a frying pan heated with vegetable oil until soft. Salt and pepper to taste. Finally, add finely chopped garlic. Cool to room temperature. Then add finely chopped olives and cheese to the filling.
2. Prepare the glaze: mix all ingredients in a saucepan and heat until the sugar dissolves.
3. Dry the pork with a paper towel. Using a sharp knife, unroll it into a thin layer, 0.5-0.6 cm thick, lightly beat it with a culinary hammer, and place it on cling film in the form of a rectangle. Then distribute the filling around the perimeter, roll it into a roll. Wrap in foil or secure the roll with kitchen twine. Place in the oven preheated to 180°C for about 1 hour. 10 minutes before the end of cooking, open the foil in the center, grease with miso glaze. Repeat the operation 2 more times, continuing to bake. Cut the finished roll into portions.
