Gunkans with salad chuka in Sesame sauce Tamaki

Cooking method:

1. Rinse the rice well to remove the starch it contains. Combine rice with water, bring to a boil, cover, reduce heat to low, cook for 15 minutes. Then leave covered for another 20 minutes. Transfer the cooked rice to a bowl, pour over the rice dressing, and stir to combine. Leave for another 10 minutes.
2. Cut the nori into strips 3 cm wide.
3. Wet your hands with water to keep the rice from sticking. Take a portion of rice, approximately 25 gr. Form an oblong ball and put it on the center of the nori strip and wrap it around, secure the edge of the nori with 1-2 rice grains.
4. Form the gunkan, give it the correct shape. Form all gunkans in this way.
5. Drain the Chuka lettuce into a sieve, then pour over the Tamaki Sesame Sauce. Fill each gunkan with salad.
6. Wash quail eggs in water with vinegar, carefully break the shell, separate the protein from the yolk. Lay the egg yolks on top of the salad.
7. Decorate with chili threads.
